01 - Slice sweet potatoes into very thin rounds, approximately 1/8 inch thick or thinner, using a mandoline slicer or sharp knife.
02 - Pat sweet potato rounds thoroughly with paper towels to remove excess moisture.
03 - Combine potato slices in a large mixing bowl. Add olive oil, sea salt, and optional seasonings. Toss until evenly coated.
04 - Preheat the air fryer to 350°F (175°C) for 3 minutes.
05 - Layer potato slices in a single, even layer in the air fryer basket. Work in batches to avoid overlapping.
06 - Air fry for 10 to 15 minutes, shaking the basket halfway through cooking. Monitor in the final minutes to prevent burning; cooking time will vary by slice thickness.
07 - Remove chips once crisp and golden. Allow to cool slightly; chips will further crisp as they rest. Repeat with remaining slices. When fully cooled, store in an airtight container.
