# Directions:
01 - Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add Cajun sausage slices and cook for 3 to 4 minutes until browned on both sides. Remove sausage from skillet and set aside.
02 - Add remaining tablespoon olive oil to the skillet. Add diced sweet potatoes and cook, stirring occasionally, for 8 to 10 minutes until starting to soften and lightly browned.
03 - Add diced red and green bell peppers, red onion, and a pinch of salt. Sauté for 5 to 6 minutes until vegetables have softened.
04 - Stir in minced garlic, Cajun seasoning, smoked paprika, black pepper, and cayenne pepper if desired. Cook for 1 minute until the mixture releases its aroma.
05 - Return the browned sausage to the skillet. Mix thoroughly and cook for an additional 3 to 4 minutes, ensuring sweet potatoes are tender and flavors are well combined.
06 - Taste the mixture and adjust with additional salt or Cajun seasoning as needed.
07 - Remove skillet from heat and garnish with sliced spring onions and chopped parsley. Serve hot.
