- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
- Brush both sides of each bread slice evenly with the melted butter. Cut each slice into quarters to create bite-sized portions. Arrange the bread pieces on the prepared baking sheet.
- Bake the bread bites for 8 to 10 minutes, flipping them halfway through the baking time, until they are golden brown and crisp. Remove from the oven and let them cool slightly.
- In a skillet set over medium heat, melt 2 tablespoons of butter. Add the diced apples, brown sugar, cinnamon, nutmeg, and salt. Cook, stirring frequently, until the apples are tender and have caramelized, approximately 6 to 8 minutes. Stir in the lemon juice and remove the skillet from the heat.
- In a small mixing bowl, combine the granulated sugar and cinnamon. If using, stir in the toasted chopped pecans and finely chopped crystallized ginger.
- Spoon a portion of the warm cinnamon-apple mixture onto each of the prepared toast bites. Generously sprinkle the sugar rubble mixture over the apple topping.
- Serve the cinnamon-apple toast bites immediately while they are warm and the sugar rubble is crunchy.
