Crunchy cinnamon-apple toast bites with sweet sugar rubble—playful, sweet-savory, and easy to prepare in 30 minutes.
# Components:
→ Toast Bites
01 - 4 slices brioche or thick-cut white bread, crusts removed
02 - 2 tablespoons unsalted butter, melted
→ Cinnamon-Apple Topping
03 - 2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, diced small
04 - 2 tablespoons unsalted butter
05 - 2 tablespoons light brown sugar
06 - 1 teaspoon ground cinnamon
07 - 1/4 teaspoon ground nutmeg
08 - Pinch of salt
09 - 1 teaspoon lemon juice
→ Sugar Rubble
10 - 1/4 cup granulated sugar
11 - 1/2 teaspoon ground cinnamon
12 - 2 tablespoons toasted chopped pecans (optional)
13 - 1 tablespoon finely chopped crystallized ginger (optional)
# Directions:
01 - Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
02 - Brush both sides of each bread slice evenly with the melted butter. Cut each slice into quarters to create bite-sized portions. Arrange the bread pieces on the prepared baking sheet.
03 - Bake the bread bites for 8 to 10 minutes, flipping them halfway through the baking time, until they are golden brown and crisp. Remove from the oven and let them cool slightly.
04 - In a skillet set over medium heat, melt 2 tablespoons of butter. Add the diced apples, brown sugar, cinnamon, nutmeg, and salt. Cook, stirring frequently, until the apples are tender and have caramelized, approximately 6 to 8 minutes. Stir in the lemon juice and remove the skillet from the heat.
05 - In a small mixing bowl, combine the granulated sugar and cinnamon. If using, stir in the toasted chopped pecans and finely chopped crystallized ginger.
06 - Spoon a portion of the warm cinnamon-apple mixture onto each of the prepared toast bites. Generously sprinkle the sugar rubble mixture over the apple topping.
07 - Serve the cinnamon-apple toast bites immediately while they are warm and the sugar rubble is crunchy.
