# Directions:
01 - Preheat oven to 200°F to keep items warm after assembly.
02 - In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
03 - In a separate bowl, whisk buttermilk, egg, and melted butter. Pour wet mixture into the dry ingredients and stir until just combined. Avoid overmixing.
04 - Combine shredded cheddar, pepper jack, diced jalapeño, and smoked paprika in a small bowl.
05 - Stir crushed mini pretzels with melted butter in a bowl and set aside.
06 - Heat a nonstick skillet or griddle over medium heat. Lightly grease with vegetable oil spray or additional melted butter.
07 - Drop 1 tablespoon of pancake batter onto the skillet, then top with 1 heaping teaspoon spicy cheese filling. Cover with another tablespoon of batter.
08 - Cook for 2 to 3 minutes until bubbles form and edges set.
