07 - 16 cherry tomatoes, halved
08 - 16 fresh basil leaves

# Directions:
01 - In a bowl, combine cold sushi rice with rice vinegar, sugar, and salt until evenly mixed.
02 - Line an 8x8 inch pan with plastic wrap. Press the seasoned rice evenly into the pan, cover, and chill for at least 20 minutes to firm up.
03 - Remove the chilled rice slab and cut into 16 uniform squares.
04 - Heat neutral oil in a non-stick skillet over medium-high heat. Sear the rice squares in batches for 2 to 3 minutes per side until golden and crispy. Drain on paper towels.
05 - Top each crispy rice square with one mozzarella ball, half a cherry tomato, and a fresh basil leaf.
06 - Drizzle olive oil and balsamic glaze over the assembled bites, then season with salt and black pepper to taste.
07 - Serve immediately while the rice is warm and crisp.
