01 - 1 1/2 cups cooked chickpeas (or 1 can drained and rinsed)

→ Homemade Pita Bread
09 - 2 cups all-purpose flour, plus extra for dusting
10 - 2 tsp instant dry yeast
11 - 1 tsp sugar
12 - 3/4 cup warm water
13 - 1 tbsp olive oil
14 - 1/2 tsp salt
→ Veggie Sticks
15 - 2 large carrots, peeled and cut into sticks
16 - 1 cucumber, cut into sticks
17 - 1 red bell pepper, cut into strips
18 - 1 yellow bell pepper, cut into strips
19 - 1 cup cherry tomatoes
# Directions:
01 - Combine tahini and fresh lemon juice in a food processor and blend for one minute until creamy.
02 - Add extra-virgin olive oil, minced garlic, ground cumin, and sea salt. Process for 30 seconds to combine.
03 - Add cooked chickpeas and blend for one minute. Scrape the bowl sides, add two tablespoons cold water, and process until smooth and fluffy. Adjust water as needed for desired consistency.
04 - Taste and amend seasoning with additional salt or lemon juice. Transfer to a serving bowl, drizzle with olive oil, and optionally sprinkle with paprika or sesame seeds.
05 - Dissolve instant dry yeast and sugar in warm water. Let stand for five minutes until frothy.
06 - Combine flour, salt, olive oil, and yeast mixture. Stir until a dough forms.
07 - Knead on a floured surface for five to seven minutes until smooth.
08 - Place dough in a lightly oiled bowl, cover, and let rise in a warm environment for one hour.
09 - Preheat oven to 475°F and place a baking stone or tray inside to heat.
10 - Punch down the dough, divide into six equal portions, and roll each into a 1/4-inch thick circle.
11 - Place dough circles on the heated baking surface and bake for three to four minutes until puffy and lightly golden.
12 - Cover freshly baked pitas with a clean kitchen towel to maintain softness.
13 - Wash and cut carrots, cucumber, red and yellow bell peppers into sticks or strips. Arrange together with cherry tomatoes on a platter.
14 - Arrange the hummus in a bowl and surround with warm pita wedges and assorted veggie sticks.
