Korean-Style Ground Turkey (Printable)

Quick, flavorful Korean-inspired ground turkey with spicy-sweet sauce, garlic, ginger, and sesame. Ideal for weeknights over rice.

# Components:

→ For the Sauce

01 - 1/4 cup soy sauce (use low sodium if preferred)
02 - 2 teaspoons cornstarch
03 - 1/2 tablespoon brown sugar, packed
04 - 1/2 teaspoon red chili flakes

→ For the Turkey

05 - 2 tablespoons sesame oil
06 - 2 cloves garlic, minced
07 - 1 tablespoon fresh ginger, grated
08 - 15 oz ground turkey

→ Finishes & Garnish

09 - 6 tablespoons chives, chopped
10 - 2 tablespoons sesame seeds, toasted

# Directions:

01 - Whisk together the soy sauce, cornstarch, brown sugar, and red chili flakes in a small bowl until the cornstarch is fully dissolved. Set aside.
02 - Heat sesame oil in a large skillet over medium-high heat. Add minced garlic and grated ginger; stir-fry for about 30 seconds until fragrant.
03 - Add ground turkey to the skillet. Cook, breaking it up with a spatula, until no longer pink and cooked through, about 5 to 7 minutes.
04 - Pour the prepared soy sauce mixture into the skillet. Stir well to coat the turkey. Cook for 2 to 3 minutes on high heat until the sauce thickens and turns glossy. Add 1 tablespoon of water if the sauce becomes too thick.
05 - Stir in chopped chives, reserving some for garnish. Remove from heat. Sprinkle with toasted sesame seeds and remaining chives. Serve hot over rice with vegetables.

# Expert Advice:

01 -
  • The spicy-sweet sauce clings to every bite of turkey, making each forkful feel like a complete thought instead of just meat and seasoning
  • You probably have everything in your kitchen right now, which is the kind of revelation that makes weeknight cooking feel less like a chore
02 -
  • The sauce will seem thin at first but thickens quickly once it hits the hot pan, so do not be tempted to add more cornstarch
  • Ground turkey can release a lot of liquid as it cooks, so let it brown properly before adding the sauce for the best texture
03 -
  • If your sauce thickens too much, a tablespoon of water or chicken broth brings it back to the perfect consistency
  • Gochujang adds incredible depth if you want to bump up the authentic Korean flavor profile
