# Directions:
01 - In a small skillet set over medium-low heat, melt the butter. Add the sliced onion, granulated sugar, and a pinch of salt. Sauté, stirring occasionally, until onions are deeply caramelized and golden brown, about 12 to 15 minutes. Keep the heat low to develop a rich, savory sweetness.
02 - Transfer the caramelized onions with any residual pan juices into a blender. Add 2 tablespoons of milk and process until smooth. Pass the mixture through a fine-mesh sieve to achieve a silky purée.
03 - Brew 2 shots (2 fluid ounces) of espresso using an espresso machine or strong coffee maker. Divide the espresso evenly between two mugs. Stir 1 tablespoon of the strained onion purée into each mug until fully incorporated.
04 - Heat the remaining milk over gentle heat until steaming. Froth using a milk frother or whisk until creamy and foamy.
05 - Pour the frothed milk over the espresso-onion mixture in each mug. If desired, stir in honey or maple syrup for sweetness. Garnish with a sprinkle of freshly ground black pepper or chopped chives if preferred. Serve immediately.
