# Expert Advice:

01 -
  • They come out shatteringly crisp without a single drop of frying oil, so you can eat twice as many without the guilt.
  • The ranch seasoning clings to every ridge of panko, giving you that addictive savory punch in every bite.
  • They take less than half an hour start to finish, which means you can pull them together even when people show up early.
02 -
  • If your mushrooms are wet, the coating will slip off in sad clumps. Pat them dry with a towel before you start, even if they look clean.
  • Don't crowd the pan or they'll steam instead of crisp. If you need to make a double batch, use two sheets or bake them in waves.
  • Flip them gently with a spatula, not tongs. Tongs will squeeze the mushrooms and tear off the crust you worked so hard to build.
03 -
  • Use a fork to lift each mushroom out of the egg so you don't end up with clumpy, soggy patches in the panko.
  • Let the coated mushrooms sit on the counter for 5 minutes before baking so the coating sets and sticks better in the oven.
  • Double the ranch seasoning and keep the extra in a jar—it's incredible on popcorn, roasted vegetables, or scrambled eggs.
