Juicy watermelon and crisp cucumber tossed with lime, Tajín, cilantro, and optional feta for a bright summer dish.

01 - 4 cups seedless watermelon, cut into 1-inch cubes
02 - 2 cups English cucumber, thinly sliced
03 - 1/4 cup red onion, thinly sliced (optional)
04 - 1/4 cup fresh cilantro, finely chopped
→ Dressing & Seasoning
05 - 2 tablespoons fresh lime juice (about 1 lime)
06 - Zest of 1 lime
07 - 1–2 teaspoons Tajín seasoning, to taste
08 - Pinch of sea salt
09 - Freshly ground black pepper, to taste
→ Optional Garnishes
10 - 1/4 cup feta cheese, crumbled (optional)
11 - Extra lime wedges, for serving
# Directions:
01 - Wash and dry the watermelon, cucumber, cilantro and lime. Cube the watermelon and thinly slice the cucumber and red onion; chop the cilantro.
02 - In a large salad bowl, add the watermelon cubes, sliced cucumber, sliced red onion (if using) and chopped cilantro. Gently toss to combine.
03 - Drizzle lime juice over the assembled produce, sprinkle lime zest, Tajín, a pinch of sea salt and a few grinds of black pepper. Toss gently until the seasoning is evenly distributed.
04 - Taste and add additional Tajín or lime juice to brighten flavors as needed.
05 - For extra refreshment, cover and refrigerate for about 10 minutes before serving; otherwise serve immediately.
06 - If desired, top with crumbled feta and serve with lime wedges alongside.
