Save A delightful bite-sized treat featuring creamy apple-flavored truffle centers coated in buttery caramel and crisp chocolate, perfect for parties or gifting.
I first made these truffle pops for a fall birthday party, and they instantly became a crowd favorite thanks to their unique apple-caramel twist.
Ingredients
- White chocolate chips: 1 cup (220g)
- Heavy cream: 3 tbsp (45ml) for filling, 2 tbsp (30ml) for caramel coating
- Apple sauce (unsweetened): 1/2 cup (120g)
- Ground cinnamon: 1/2 tsp
- Ground nutmeg: 1/4 tsp
- Finely chopped dried apples: 1/2 cup (60g)
- Vanilla extract: 1/2 tsp
- Salt: Pinch
- Soft caramel candies, unwrapped: 10 oz (280g)
- Dark or milk chocolate, chopped or in chips: 8 oz (225g)
- Coconut oil or vegetable shortening (optional): 1 tbsp (14g)
- Lollipop sticks: 24
- Chopped roasted pecans or sprinkles (optional): 1/4 cup (30g)
Instructions
- Make the Truffle Filling:
- In a heatproof bowl, combine white chocolate chips and 3 tbsp heavy cream. Microwave in 20-second bursts, stirring between each, until melted and smooth. Stir in apple sauce, cinnamon, nutmeg, dried apples, vanilla extract, and salt until well combined. Refrigerate the mixture for 1 hour, or until firm enough to scoop.
- Shape the Pops:
- Line a baking sheet with parchment paper. Scoop 1-tablespoon portions of the chilled truffle mixture and roll into balls. Insert a lollipop stick into each ball. Freeze for 20–30 minutes until firm.
- Coat with Caramel:
- In a small saucepan, melt caramel candies and 2 tbsp heavy cream over low heat, stirring until smooth. Dip each truffle pop into the caramel, swirling to coat. Let excess drip off. Place back on the parchment paper. Refrigerate 15 minutes to set.
- Dip in Chocolate:
- Melt chocolate and coconut oil (if using) in a microwave-safe bowl in 20-second intervals until smooth. Dip each caramel-coated pop into the chocolate, letting excess drip off. Immediately sprinkle with chopped pecans or sprinkles if desired. Place on parchment paper and chill until set.
- Serve:
- Store in an airtight container in the refrigerator until ready to serve.
Save Makes a wonderful homemade gift for holidays or a special movie night with my family—the kids love helping with the chocolate dipping.
