# Directions:
01 - Bring a large pot of salted water to a boil. Cook spaghetti or linguine until al dente, following package instructions. Reserve 1 cup pasta water, then drain pasta.
02 - In a large skillet, melt butter with olive oil over medium heat. Add sliced cabbage and onion (if using); cook, stirring occasionally, for 15–20 minutes until cabbage is deeply golden and caramelized. Stir in minced garlic and cook for 1–2 minutes longer.
03 - In a mixing bowl, whisk together egg yolks, whole egg, grated cheese, black pepper, and smoked paprika (if using) until smooth.
04 - Add drained pasta to the skillet with caramelized cabbage. Turn off heat.
05 - Immediately pour egg and cheese mixture over pasta and cabbage, tossing vigorously to evenly coat. Add reserved pasta water gradually, stirring, until a creamy sauce forms and clings to noodles.
06 - Adjust seasoning with salt and extra black pepper to taste. Serve promptly, garnished with additional cheese and black pepper as desired.
