# Directions:

01 - In a large bowl, mix plain flour, baking powder, and fine sea salt until evenly distributed.
02 - Add Greek yogurt and cottage cheese to the dry mixture. Stir with a spoon or use your hands until a shaggy dough forms.
03 - Turn the dough onto a lightly floured surface and knead gently for 2 to 3 minutes until smooth. Add additional flour if the dough is too sticky.
04 - Divide the dough into 6 equal portions and shape each into a ball.
05 - Roll each ball into a flat circle approximately 1/4 inch (5–6 mm) thick, dusting with flour as necessary to prevent sticking.
06 - Heat a nonstick skillet or cast iron pan over medium heat.
07 - Lightly brush the pan with olive oil or melted butter.
08 - Cook one or two flatbreads at a time for 2 to 3 minutes on each side, until golden spots form and the flatbread is cooked through.
09 - Transfer cooked flatbreads to a plate and cover with a clean towel to retain warmth. Repeat the cooking process with remaining dough.

# Expert Advice:

01 -
  • They come together in under 30 minutes with ingredients you probably already have on hand.
  • The cottage cheese creates an incredibly soft interior while the pan-fried edges get gloriously crispy and spotted.
  • They're endlessly versatile—wrap them around fillings, dip them in hummus, or just eat them warm with a drizzle of olive oil.
02 -
  • Don't knead this dough like bread dough—overworking it makes them tough instead of tender, so treat it gently and stop as soon as it comes together.
  • If your cottage cheese is very wet, squeeze it gently in a clean towel first, because excess moisture will make the dough sticky and harder to work with.
03 -
  • Roll your flatbreads to a consistent thickness so they cook evenly, and use a light hand with extra flour when dusting—too much will make them dry.
  • If you have leftovers, store them in an airtight container and reheat them in a dry pan over medium heat for just a minute or two to restore their softness.
