01 - Place cooked rice in a microwave-safe bowl and layer flaked salmon evenly over the top.
02 - Top rice and salmon with ice cubes, then loosely cover with parchment paper or a microwave-safe plate.
03 - Microwave on high power for 2 to 3 minutes until rice and salmon are heated through, moist, and ice cubes have melted.
04 - Remove bowl from microwave and drizzle heated rice and salmon with soy sauce and sesame oil.
05 - Arrange slices of avocado, cucumber, and pickled ginger over the base. Sprinkle with toasted sesame seeds and scallion.
06 - Add chili flakes or sriracha if desired. Serve immediately while hot.
