04 - 1 large red onion, sliced into wedges
05 - 2 cloves garlic, minced

→ Seasonings

06 - 3 tbsp olive oil
07 - 1 tsp dried oregano
08 - 1 tsp dried thyme
09 - ½ tsp smoked paprika
10 - ¾ tsp salt, or to taste
11 - ½ tsp freshly ground black pepper
12 - Pinch of red pepper flakes (optional)

# Directions:

01 - Set the oven temperature to 425°F.
02 - Combine potatoes, bell peppers, red onion, olive oil, garlic, oregano, thyme, smoked paprika, salt, black pepper, and red pepper flakes in a large mixing bowl and toss until thoroughly coated.
03 - Spread the vegetable mixture evenly on a large rimmed baking sheet. Nestle the sausages evenly among the vegetables.
04 - Place the baking sheet in the oven and roast for 35 minutes, flipping the sausages and stirring the vegetables halfway through, until the potatoes are golden and tender and sausages reach an internal temperature of 160°F.
05 - Remove tray from oven and let rest for 5 minutes. Garnish with fresh parsley and serve with lemon wedges as desired.
