# Directions:

03 - Add cannellini beans, 1 tablespoon olive oil, lemon juice, thyme, salt, and pepper to the food processor. Blend until smooth and creamy, scraping down sides as needed. Adjust seasoning to taste.

# Expert Advice:

01 -
  • It tastes indulgent and restaurant-quality but requires almost no skill or stress.
  • The roasted garlic is naturally sweet, so there's no harsh bite, just velvet creaminess on your tongue.
  • You can make it ahead and have it waiting in your fridge, ready to brighten any meal.
02 -
  • Don't skip the foil when roasting garlic or it will dry out on top; the steaming effect inside the foil is what makes it soft and sweet.
  • If your spread comes out too thick, a splash of warm water or another drizzle of olive oil will loosen it to exactly the consistency you want.
03 -
  • Buy garlic heads that feel heavy and compact; they have more flavor than light, papery ones.
  • Toast your bread right before spreading so it stays crisp and doesn't absorb moisture from the mixture.
